Since 1947, Léon Chaillot has dry-cured pork in Ardèche. We use fresh, never-frozen French meat, traditional family recipes and a slow drying process. Our team of 30 manages production and export logistics for distributors and food-service partners across Europe and Asia.

Our quality standards

Rigorous quality control from production to export

From ingredient selection to final customs documentation, we maintain the same standards for every shipment.

    A 30-person independent family business in Ardèche, operating from one site since 1947.

    Our traditional recipes and techniques come from the four Chaillot brothers who founded the business and still guide the way we work today.

  • Traditional recipes

    Our recipes are built around meat, salt, pepper and spices. We allow time for the flavours to develop naturally.

  • Handmade production

    Each piece is cut, mixed, filled and tied by hand in our workshop.

  • French pork

    We use fresh, never-frozen, fully traceable cuts of pork from French farms. Our pork is certified Le Porc Français: born, raised, slaughtered and processed in France.

  • Mountain-raised pork

    Our dedicated range uses pork from mountain farms. Mountain producers receive a premium for every kilogram sold.

  • Hand-filled casings

    We fill each casing by hand, then tie each piece and prepare it for drying.

  • Slow drying

    After étuvage, each piece spends several weeks in the drying rooms. We keep this traditional pace rather than accelerating the process.

Léon Chaillot is a 30-person family business in one Ardèche workshop, working with partners throughout Europe and Asia.

The same team makes the products, prepares the export documents and follows each shipment to its destination. You get charcuterie made by hand on family recipes, from a supplier that knows how to manage approvals, certificates, case preparation and long-haul logistics.
